How Gilbert eats: farm roots, Sonoran recipes and Arizona grain

A farm in the middle of a neighborhood, bagels from Arizona heritage grain, beer from Verde Valley barley and Sonoran family recipes: what makes Gilbert's food its own.

Gilbert was a farm town long before it was a suburb, and its food still leans that way. Alfalfa, cotton, dairy cattle and even watermelons once filled the fields around the rail siding, and the town's best-known eating places tend to share an interest in where things come from: a farm in the middle of a neighborhood, grain grown in Arizona, Sonoran family recipes. Here is how Gilbert eats, and where to taste it.

Farm roots, Sonoran flavors

Two traditions run through Gilbert's tables. The first is the farm. HD SOUTH's history of the town recalls hay shipped to the Army in World War I, dairy herds, and watermelons sent out by rail, and that inheritance shows up today as a taste for local produce and from-scratch cooking.

The second is the Sonoran kitchen, shared across southern Arizona and northern Mexico. Nando's Mexican Cafe opened its first restaurant, the one it still calls Store One, on Baseline Road in Gilbert in 2003, built on family recipes from co-founder Fernando's mother and stepfather. Its menu carries Sonoran stacked enchiladas and chile colorado alongside green-chile and Hatch chile dishes, and the restaurant now has five Arizona locations while staying locally owned.

Grown close to home

The clearest example of Gilbert's farm streak is Agritopia, at Higley and Ray roads, where about 12 acres are set aside for permanent organic farming on land first cleared for alfalfa in 1927. Joe's Farm Grill, in the 1966 ranch house where the Johnston family once lived, harvests fruit, vegetables and herbs from the farm, buys from other Arizona farmers and uses local, all-natural beef for its burgers. The restaurant marked its 20th anniversary in fall 2026. A short walk away, Garage-East makes and pours Arizona wine as a licensed farm winery, and opens early for specialty coffee and baked treats on its backyard patio.

Arizona grain has become a Gilbert story too. Don Guerra's Barrio Bagel & Slice opened on Arizona Avenue in April 2025, bringing the Tucson baker's heritage-grain dough north for bagels, breakfast sandwiches, pizza by the slice and loaves to take home; the bakery describes its grains as locally sourced. A few doors up the avenue, Arizona Wilderness's Gilbert brewpub brews with Sinagua Malt, Arizona-grown barley from Camp Verde whose farmers plant winter grain instead of thirsty summer crops to leave more water in the Verde River. The brewery, which began in 2013 and sends its spent grain to local farmers, hosted Maltstock on November 7, 2026, a festival of Arizona-grown grain with breweries from around the state.

Some local flavors are simply local habits. Flancer's, on Gilbert Road downtown, has spent more than 25 years baking its bread throughout the day and building sandwiches on it, including its prickly pear chicken sandwich with green chile aioli. Its burgers use Gold Canyon Angus beef, ground fresh daily.

Markets and the farm store

Gilbert's farmers market map changed recently. For 15 years the Gilbert Farmers Market filled the park-and-ride west of the water tower on Saturdays. When that lot was slated for demolition for the town's Heritage District improvement project, the market moved on October 4, 2025 to the Chandler-Gilbert Community College campus at Gilbert and Pecos roads, which is in Chandler, about five miles south of downtown Gilbert. It still runs every Saturday with more than 150 vendors of produce, eggs, meat, cheese, bread and prepared foods and posts its holiday breaks on its site.

Downtown has a Saturday market of its own. The Heritage District Farmers Market, run by the nonprofit Arizona Urban Agriculture Foundation, sets up on West Vaughn Avenue every Saturday morning, an hour earlier in the hot months, as a market for local growers and makers.

The same foundation runs Agritopia Farm. Its farm store sells the farm's seasonal produce and local goods from Tuesday through Sunday, and on the first and third Wednesday evenings from September to May the farm holds Farm Nights, a small night market of local foods, crafts and produce.

Eating the Gilbert way

You can build a whole day of eating in Gilbert around the farm-and-grain story. Start with a heritage-grain bagel on Arizona Avenue, take a basket of produce from the farm store, stop at Nando's for stacked enchiladas, and finish with an Arizona-malt beer or a glass of Arizona wine. Every stop is a local business, and many of the ingredients have an Arizona address.

Check each place's own site before you go: farm store days shift with the season, and the markets post holiday closures.
